Job Description:

As the Manager of Culinary Development, you will oversee the design process and development of all Emirates onboard culinary Food & Beverage (F&B) experiences, from conception to execution. You will collaborate closely with internal and external stakeholders to ensure that all culinary designs adhere to standards and brand guidelines. Additionally, you will be responsible for ensuring that all services provided align with corporate values, maintain food safety standards, adhere to Halal requirements, and meet operational performance standards. 


Job Outline:



  • Manage the F&B design such as the menu development, beverage planning, menu cards, product selections and Emirates culinary council and continuously keep up to date on competitors, research global trends and present key findings. Collaborate with the Regional Catering Managers and Food Safety teams to conduct menu presentations at regular intervals, at contractors locations (On-board and Lounges) by detailing menu requirements to ensure that caterers understand and agree on food product requirements, such as quality, innovation, specification, and presentation.

  • Contribute culinary expertise to station catering supplier selection processes delivering robust analysis of caterer capabilities and a clear recommendation to support business decisions.

  • Plan menus and periodic rotations for onboard and lounges by taking into consideration the passenger needs and provide variety of choice and manage the roadmaps for all the projects related to the F&B culinary experience and implement the brand hospitality vision throughout all customer F&B touchpoints.

  • Collaborate with all parties involved, both internal and external, in the design, definition and development process with an emphasis on the needs of the brand, hospitality, and customer experience requirements. This includes close collaboration with Catering Operations Team in the supply of catering services from Emirates Flight Catering and network-wide catering stations.

  • Ensure that F&B selections and features are crew and guest-centric while still satisfying the brand, stature, and commercial objectives.

  • Continuously evaluate and optimise F&B concepts and menus. Collaborate with the Service Experience team to ensure the design contributions are feasible in terms of service, safety, and quality control.

Job Requirements:

Education:



  • Degree or Honours (12+3 or equivalent) :


Experience: 



  • In-Flight Service.In-flight Catering : 10+ Years

  • Educated to degree level or have equivalent work experience

  • Chef with fine dining experience or airline culinary.


Knowledge / Skills:



  • Experience of managing 3rd party supplier contracts and service level agreements

  • Experience of product design development 

  • A creative and agile approach to workplace challenges

  • Regional experience is desired

  • Chef background with fine dining restaurant experience

  • Understanding of airline regulatory environment and restrictions

  • Broad understanding of airline planning and operations
